Happy Solstice and first day of summer! This time of year is always filled with the nostalgia-tinged buoyancy of all the possibilities that long days of leisure promise. It’s an addictive feeling, and it gets me every year, even if my summers are no longer quite so relaxed. It’s intrinsically linked to those gorgeous, glimmering months outside of the structure of school, outside in general, and all of the ridiculous fun, warm weather, swimming pools, swimming holes, and imperfect family vacations we could cram into two months.

Get to it with this awesome, bright, zesty salad that is like a deconstructed taco: grilled corn and grilled salmon, cherry tomato salsa, black beanscrunchy romaine lettuce, and jalapeño jack cheese.
