You are totally freaking my out with your wisdom here, because I have been terribly homesick for Arkansas, where I grew up. I’ve been thinking about how I seem to miss a lot of the things that I complained about (even the swampy heat and humidity!). I like your take on the saying, though. I am just towards the end of Cheryl Strayed’s ‘Wild’ and your pictures and words have convinced me that I need to get far out of the city and feel just how big mountains and trees can be. That and I need to make these zucchini bread bites. I, too, associate zucchini bread with my childhood and more so than banana bread or cookies or any other homemade treat. Hi Michelle! To answer your question: I am a big fan of improvising and can only imagine that regular sugar would be fine. Though dark brown sugar might be better for its richer flavor. As for the cocoa powder, Sara explained in the book that non-alkalized cocoa powder reacts with baking soda to help baked goods rise – a good thing when using non-gluten flour. I’m between homes right now, between continents. So interesting to notice the different things that pull us in one direction or the other. I’m reflecting on all of this in the tiniest village in the South of France, where I’m surrounded by nature. Perspective is a very powerful thing. Like relieving a strained muscle that has been flexed for what may seem like hours, returning home can feel so refreshing and relaxing. Montana has a power like few other places and Glacier reigns supreme over all of its beauty. It has rightfully earned the name “The Crown of the Continent”. John Steinbeck said it best: “I’m in love with Montana. For other states I have admiration, respect, recognition, even some affection. But with Montana it is love.  Last week, one of my goals driving home was to gather enough elderflowers to make something – a syrup, perhaps, or an infused vodka. I’ve been making elderflower syrup for the past few years from the trees that grow in my yard in Ireland. My favorite way to use it is in some Prosecco to make an elderflower Bellini – summer in a glass. I also made a syrup from the elderberries last autumn for the first time, which was lovely too. Elderflower syrup will forever remind me of living in Ireland. At the right time of year, elderflowers blossoms are everywhere. This is so awesome. I’ve had it on my list to recreate a cocktail I had a few weeks ago at one of our favorite restaurants down here, it’s called the “King Collins” and it’s made with Hendrick’s Gin, elderflower syrup, the juice of one lemon, cucumber, and a splash of sparkling water. I love elderflower as a syrup, fritters, anything at all with that delicious smell! My mom has a neat trick for separating the flowers from the stems. She stores the clusters of flowers in a nylon bag for a day, then she simply shakes each stem and the flowers fall right off. Mary - June 26, 2012 - 6:25 am

First of all, I was on your site maybe 5 minutes ago, wondering if you had written a new post. And now here it is! Hello, I work at Yoga Journal magazine. We are doing a story on fruit popsicles for our June issue. We love the 4th photo of this post. The one with the dark background with the popsicles stacked. The bruleed citrus reminds me of my Grandma’s broiled grape fruit in the mornings. She always could pick the most juicy and sweet grape fruit. By far my favorite part about winter. Ooooh honey cardamom yogurt. Why haven’t I thought of that? Sounds fancier than my honey and cinnamon yogurt…I’ll have to give that one a go! Ever since Yotam Ottolenghi roasted grapefruit halves for London, I’ve been a slavish fan of cooking them (as opposed to just eating them raw and quartered).
