 It’s that time of year. The evenings are stretching out and I find myself relaxing with the knowledge that it won’t be dark at 6 pm, or even 7. First of all, I was on your site maybe 5 minutes ago, wondering if you had written a new post. And now here it is! Thank goodness for Facebook, otherwise I probably wouldn’t have checked back for a few more days. I did see the post on Sprouted Kitchen and I’ve been anxious to make it ever since I came across it. I’ve been on a coconut milk kick recently and I just know that it would make for the most wonderful popsicle (or ice cream) base. And, from the look of these pictures, it was a huge success. Beautiful photos! I hadn’t heard of larb, either, and I love that quote about it. I imagine my 4 year old giggling, telling her we are having ‘larb’ for dinner. Your photographs are gorgeous, and your recipes very inspiring…not to mention, your writing and the way you view things; life, as a whole.. My mom and sister make loads of pickles each summer, but alas, okra nor sea beans are abundant here. These look smashing though. Gorgeous little things these sea beans are! I have much more of a salt tooth than a sweet tooth (which probably explains my total fail at baking!) so I totally get you there. I’ve been a salt-tooth since I can remember – from drinking the pickle jar juice to adding salt to ice cream. Guilty. Me and pickles are tight – yet I’ve never tried okra. I almost bought some sea beans last weekend, but decided against it at the last minute. The pickled sea beans look amazing and I’ll try to pick some up soon and give them a try. I’ve got a salt tooth too. Caramel is only really appealing to me with a good kick of sea salt over the top. And I think these would be just the thing to perk up some scallops on a sweet corn puree. I love dry roasted okra with just a sprinkling of salt. I think the pickled version would be divine too so shall have to give that a go (if you pop it into a water bath for 10 to 20 minutes do you suppose it would compromise the texture/taste (just thinking to save for future use)? Yummmm. This looks so good. I’ve been experimenting with non-mayo potato salads this summer too! My fave so far is thinly slice new potatoes with olive oil, lemon juice & zest, garlic, cilantro, and green onion. Sounds weird, but but it’s so refreshing (unlike my dad’s version which is pretty much a few potatoes swimming in a vat of mayo haha).
